The most easy is Watson%26#39;s which is local chain store you can see on the streets and many of them have a pharmacist - look for the Rx sign.
Most doctors in HK clinics can speak English, some of these clinics are on street level or have a signboard at ground level, not too difficult to find one.

Pharmacists have to speak English, as it%26#39;s required for licensing in HK, though most smaller independent pharmacies don%26#39;t have the pharmacists at the counter all the time. In fact I avoid these as the staff tend to be not as professional and will often provide inaccurate or questionable advice
2) again, all doctors must speak English. They also post their professional degrees (and from where they were obtained) outside the office. So a degree(such as MBBS) from ';London';, ';Sydney'; etc. would ensure better English, and more important, practise medicine in a more western fashion (i.e. no over-prescribing antibiotics, etc..)

Also check out http://www.iamat.org/ . They provide list of doctors worldwide who speak English and have medical training in North America or Europe, and a pre-set fee schedule. Free to join. The going rates for most HK doctors are lower than the schedule, though.
