we are planning a trip to china in september, and have an itinerary that has us stay 2 nights in guilin, with a day boat trip to yangshuo. would it be more interesting to try to spend more time in yangshuo and have one night there and one night in guilin?

Make a beeline for Yangshuo ASAP, no need to spend time in Guilin.
it is good idea, one night in Guilin and one night in Yangshuo. if you want to see real country Yangshuo is good choice.

I have many posts on this area and I would suggest as have many others that yangshuo is a way better option.
